Apple-maple French toast

For this week I made a breakfast dish. It’s called an apple-maple French toast. The combination of the sweetly cooked bread and the slight bite of the apples make it the perfect breakfast dish.

Ingredients:

6 eggs

1 cup of milk

½ teaspoon of vanilla extract

Ground cinnamon

6 slices of bread, preferably Italian or French bread

2 tablespoons of butter, plus more for serving

3 apples, peeled and sliced

2 tablespoons of water

½ cup of maple syrup

Directions:

Whisk the eggs, milk, vanilla and a pinch of cinnamon in a 9×13 baking dish. Add the bread in a single layer until all of the egg is absorbed.

Meanwhile, heat a medium skillet over medium heat, melt one tablespoon of butter and add the apples. Stir until they become caramelized, about five minutes. Add the water and cook until the water has evaporated and apples are tender, around four minutes.

Pour in the maple syrup and a dash of cinnamon (adding the cinnamon really brings the apple taste out through the syrup and, mixed with cinnamon, reminds me of autumn). Simmer for a couple of minutes until the toast is done cooking.

In a large heated non-stick skillet, melt another tablespoon of butter and sauté the egg soaked bread on each side for about four minutes.

When finished cooking, plate the toast and top with apple-maple mixture and dig in. I loved this recipe. It’s great for breakfast food and that is what’s cooking this week.
